Tor to Door Wins Best Pork Sausage at DCS

Dartmoor National Park farm-based butchery "Tor to Door" won the category "Best Pork Sausage" at this weekend's Devon County Show.  The British Pig Association's "Spring Sausage Competition" was held to find "The Most Delicious and Attractive Sausage", placing more emphasis on the taste and appearance of the sausage.
 
Tor to Door's "Chorizo" flavour won through stiff competition from much larger sausage makers and it's tangy flavour and appearance found favour with the Judges including "The Black Farmer".  Made with only the best Saddleback Pork, this variety of sausage is flavoured with Spanish Sherry Vinegar, Smoked Paprika and Fennel Seeds; a very popular "Spring/Summer" choice.
 
Tor to Door actually breed the Saddleback Pigs on their farm high up in amongst the famous Tors of Dartmoor.  At Widecombe in the Moor, their home is fondly regarded as "Pig Heaven" where they roam freely through woodland and pasture forraging naturally and travelling upto only 3 miles in their lives !
 
Farm Butcher Keith Thomson attributed the success of the Holwell Sausages to the quality of the animal, their natural diet and only using the best flavours to complement the meat.
 
Keith also makes a mean Beef Sausage with flavours including Beef & Chilli, Beef & Tomato and Beef & Stilton.  These are made from only the best Widecombe "Bred & Fed" Beef that is first hung for up to a month.  His Lamb & Rosemary is also popular, made from Scotch Blackface variety that is reared on the commons of Dartmoor.
 
Keith makes all his sausages by hand and feeds them into natural skins the traditional way.   The meat content in each is very high being between 80 and 95%.  The sausages are also a healthier chioce because the meat all comes from animals that are reared extensively outdoors and are therefore leaner.
